Ingredients:
1 lb ground beef
1 packet taco seasoning
1 cup salsa
1 can (15 oz) black beans, drained
1 can (15 oz) corn, drained
1 cup sour cream
Additional:
2 cups shredded cheddar or Mexican blend cheese
1 (9–10 oz) bag corn chips (Fritos or similar), slightly crushed
1/2 cup diced tomatoes
1/4 cup sliced green onions (optional)
Instructions:
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease.
Stir in the taco seasoning and salsa. Simmer for 2–3 minutes.
Add the black beans and corn and cook for another 2–3 minutes until heated through.
Remove from heat and stir in the sour cream until well combined.
Spread half of the crushed corn chips evenly in the bottom of the prepared baking dish.
Spoon the beef mixture over the chips and spread evenly.
Sprinkle the shredded cheese evenly over the top.
Bake for 20–25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with remaining crushed chips, diced tomatoes, and green onions.
Let stand for 5 minutes before serving.
