Best Cracker Pound Cake

Ingredients

2 ½ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup crushed saltine crackers (about 6–7 crackers)

½ cup milk

Instructions:

Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large bowl, beat the softened butter and sugar together until light and fluffy.

Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Fold in the crushed crackers alternately with the flour mixture and milk, beginning and ending with the flour mixture. Mix until just combined.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.

Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
