Ingredients:
1 lb ground beef
1 packet taco seasoning
1 cup crushed tortilla chips
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup canned corn, drained
1 cup black beans, drained and rinsed
½ cup salsa
¼ cup sour cream
Instructions:
Preheat the oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease.
Add the taco seasoning to the beef and stir according to packet instructions until well combined.
Stir in the corn, black beans, salsa, and sour cream until evenly mixed.
Lightly grease a baking dish and spread half of the crushed tortilla chips on the bottom.
Spoon the beef mixture evenly over the chips.
Sprinkle the cheddar and mozzarella cheeses evenly over the top.
Finish with the remaining crushed tortilla chips.
Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
Remove from the oven and let rest for a few minutes before serving.
