Creamy Garlic Butter Steak Bites with Penne

Ingredients:

  • 12 oz penne pasta
  • 1 ½ lb sirloin steak, cut into bite-size pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & freshly ground black pepper
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 2 cups heavy cream
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar
  • ½ cup grated Parmesan
  • ½ cup shredded mozzarella
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne until al dente, then drain and set aside.
  2. Season the steak bites with garlic powder, smoked paprika, salt, and pepper.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the steak for 2–3 minutes per side until browned to your preferred doneness. Transfer to a plate.
  4. Lower the heat to medium and melt the remaining tablespoon of butter. Add the diced onion and cook for about 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
  5. Sprinkle flour over the onion mixture and cook for 1 minute. Slowly whisk in the beef broth and heavy cream until smooth and slightly thickened.
  6. Add the cream cheese and stir until fully melted. Reduce heat to low and mix in the cheddar, Parmesan, and mozzarella until the sauce becomes rich and creamy.
  7. Return the steak (with all juices) to the skillet. Add the cooked penne and toss everything together until well coated. Adjust seasoning with extra salt and pepper if needed.
  8. Finish with chopped parsley and serve warm.
