Igloo Bites

There’s nothing better than a festive sweet treat to get you in the holiday spirit. Especially one that only takes minutes to whip up! These little Igloo Bites have it all: crunch, sweetness, and wintery peppermint flavor. Add a little sparkle with some sprinkles and this treat is ready to go. It’s the kind of no-bake goodie that feels right at home at any holiday party, a movie night indulgence, or a fun snow day snack!

INGREDIENTS
  • 8 cups Corn Pop cereal 
  • 2 (12 oz) bags white chocolate chips
  • 1 tablespoon Coconut Oil
  • 1/2 teaspoon peppermint extract 
  • 1/4 cup sugar sprinkles, optional
PREPARATION
  1. Line a large sheet pan with parchment paper, then set aside.
  2. Pour cereal into a large bowl, then set aside.
  3. In another medium-sized bowl, add white chocolate and coconut oil. Microwave in 30- second intervals, stirring in between, until chocolate is fully melted.
  4. Mix peppermint extract into the melted chocolate.
  5. Pour chocolate mixture over the cereal and mix until evenly coated.
  6. Transfer mixture to the baking sheet and spread into an even layer. Dust top with sprinkles.
  7. Allow bites to fully cool, then break into small pieces.
  8. Store in an airtight container.
