Caramel Fudge

Ingredients

3 cups (600 g) white sugar

1 cup (250 g) unsalted butter

1 cup (240 ml) heavy cream

1 can (395 g) sweetened condensed milk

1 teaspoon vanilla extract

A pinch of salt


Instructions

  1. Prepare the pan
    Line a square baking pan (20×20 cm / 8×8 inch) with parchment paper.
  2. Melt the ingredients
    In a large saucepan, combine butter, sugar, heavy cream, and sweetened condensed milk.
    Cook over medium heat, stirring constantly until the mixture melts and becomes smooth.
  3. Boil the mixture
    Increase the heat slightly and bring the mixture to a gentle boil.
    Continue to stir for about 8–12 minutes, until it thickens and reaches a light caramel color.
  4. Check the consistency
    The fudge is ready when it reaches 115°C (240°F) (soft-ball stage).
    If you don’t have a thermometer, drop a little mixture into cold water — it should form a soft ball.
  5. Add flavoring
    Remove from heat and stir in the vanilla extract and salt.
  6. Beat the mixture
    Mix for 2–3 minutes until it starts to thicken slightly and lose its glossy shine.
  7. Pour into the pan
    Spread evenly and smooth the top with a spatula.
  8. Let it set
    Allow the fudge to cool at room temperature, then refrigerate for 2–3 hours until firm.
  9. Cut and serve
    Remove from the pan and cut into squares.
