Ingredients
3 cups (600 g) white sugar
1 cup (250 g) unsalted butter
1 cup (240 ml) heavy cream
1 can (395 g) sweetened condensed milk
1 teaspoon vanilla extract
A pinch of salt
Instructions
- Prepare the pan
Line a square baking pan (20×20 cm / 8×8 inch) with parchment paper. - Melt the ingredients
In a large saucepan, combine butter, sugar, heavy cream, and sweetened condensed milk.
Cook over medium heat, stirring constantly until the mixture melts and becomes smooth. - Boil the mixture
Increase the heat slightly and bring the mixture to a gentle boil.
Continue to stir for about 8–12 minutes, until it thickens and reaches a light caramel color. - Check the consistency
The fudge is ready when it reaches 115°C (240°F) (soft-ball stage).
If you don’t have a thermometer, drop a little mixture into cold water — it should form a soft ball. - Add flavoring
Remove from heat and stir in the vanilla extract and salt. - Beat the mixture
Mix for 2–3 minutes until it starts to thicken slightly and lose its glossy shine. - Pour into the pan
Spread evenly and smooth the top with a spatula. - Let it set
Allow the fudge to cool at room temperature, then refrigerate for 2–3 hours until firm. - Cut and serve
Remove from the pan and cut into squares.
