Creamy Potato & Ground Beef Soup

Ingredients

1 lb (450 g) ground beef

4–5 medium potatoes, peeled and diced

1 small onion, finely chopped

2 garlic cloves, minced

1 medium carrot, diced (optional)

3 cups (720 ml) beef or chicken broth

1 cup (240 ml) heavy cream or milk

2 tbsp butter

1 tbsp olive oil

1 tsp paprika

1 tsp black pepper

1 tsp salt (or to taste)

½ tsp dried thyme or Italian seasoning

Fresh parsley for garnish


Instructions

  1. Cook the Beef
    Heat olive oil in a large pot over medium heat.
    Add the ground beef and cook until browned, breaking it apart with a spoon.
    Drain excess fat if needed.
  2. Sauté the Vegetables
    Add butter, chopped onion, garlic, and carrots to the pot.
    Sauté for 3–4 minutes until the onions become soft.
  3. Add Potatoes & Seasonings
    Add the diced potatoes, paprika, black pepper, salt, and thyme.
    Stir well to coat everything with the spices.
  4. Add Broth
    Pour in the broth and bring the mixture to a boil.
    Reduce heat, cover the pot, and simmer for 15–20 minutes, or until the potatoes are tender.
  5. Add Cream
    Stir in the heavy cream (or milk).
    Simmer on low heat for 5 more minutes without boiling.
  6. Adjust Seasoning
    Taste and add more salt or pepper if needed.
  7. Serve
    Ladle the soup into bowls and garnish with fresh parsley.
