Ingredients
1 lb (450 g) ground beef
4–5 medium potatoes, peeled and diced
1 small onion, finely chopped
2 garlic cloves, minced
1 medium carrot, diced (optional)
3 cups (720 ml) beef or chicken broth
1 cup (240 ml) heavy cream or milk
2 tbsp butter
1 tbsp olive oil
1 tsp paprika
1 tsp black pepper
1 tsp salt (or to taste)
½ tsp dried thyme or Italian seasoning
Fresh parsley for garnish
Instructions
- Cook the Beef
Heat olive oil in a large pot over medium heat.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Drain excess fat if needed. - Sauté the Vegetables
Add butter, chopped onion, garlic, and carrots to the pot.
Sauté for 3–4 minutes until the onions become soft. - Add Potatoes & Seasonings
Add the diced potatoes, paprika, black pepper, salt, and thyme.
Stir well to coat everything with the spices. - Add Broth
Pour in the broth and bring the mixture to a boil.
Reduce heat, cover the pot, and simmer for 15–20 minutes, or until the potatoes are tender. - Add Cream
Stir in the heavy cream (or milk).
Simmer on low heat for 5 more minutes without boiling. - Adjust Seasoning
Taste and add more salt or pepper if needed. - Serve
Ladle the soup into bowls and garnish with fresh parsley.
