Ingredients
For the Bars
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup packed brown sugar
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, melted and slightly cooled
2 large eggs
1 tablespoon vanilla extract
For the Butterscotch Icing
1 cup butterscotch chips
4 tablespoons butter
1 cup powdered sugar
2–3 tablespoons milk (to reach desired consistency)
½ teaspoon vanilla extract
Instructions
- Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan or line it with parchment paper for easier removal.
- Make the Bars
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a larger bowl, combine the brown sugar, granulated sugar, and melted butter. Mix until smooth.
- Add the eggs and vanilla extract, then blend well.
- Add the dry ingredients to the wet mixture and stir just until combined (don’t overmix).
- Spread the batter evenly into the prepared baking pan.
- Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Let the bars cool completely before icing.
- Prepare the Butterscotch Icing
- In a small saucepan over low heat, melt the butterscotch chips and butter, stirring constantly until smooth.
- Remove from heat and whisk in the powdered sugar.
- Add milk, a little at a time, until the icing becomes pourable but still thick.
- Stir in the vanilla.
- Finish and Serve
- Pour the warm icing over the cooled bars and spread it evenly.
- Allow the icing to set for about 15–20 minutes.
- Cut into squares and serve!
