Ingredients
For the crust:
2 cups all-purpose flour
1/2 cup granulated sugar
1 cup unsalted butter, cold and cut into cubes
1/4 teaspoon salt
For the pecan filling:
3 large eggs
1 cup light corn syrup
1 cup packed brown sugar
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 cups chopped pecans (plus whole pecans for topping if desired)
1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Prepare the crust by mixing flour, sugar, and salt in a bowl. Add the cold butter and blend until crumbly, then press into the baking pan. Bake for 15–20 minutes until lightly golden.
- In another bowl, whisk the eggs, then add corn syrup, brown sugar, melted butter, vanilla, and salt. Stir until smooth, then add the chopped pecans.
- Pour the filling over the warm crust and arrange whole pecans on the top if you want a decorative look.
- Bake for 25–30 minutes, or until the filling is set and does not jiggle in the center.
- Allow the pecan bars to cool completely, then lift them out using the parchment paper and cut into squares.
