Classic Creamy Potato Salad Recipe

Ingredients:

6 medium potatoes, peeled and diced

4 hard-boiled eggs, chopped

1 cup mayonnaise

2 tbsp Dijon mustard

1/4 cup chopped pickles or relish

1/3 cup finely chopped celery

1/3 cup finely chopped green onions

2 tbsp chopped parsley (optional)

Salt and black pepper to taste

Instructions:

Cook the Potatoes:

Place the diced potatoes in a pot of salted water and bring to a boil. Cook for 10-15 minutes or until tender but not mushy. Drain and let cool completely.

Prepare the Dressing:

In a large mixing bowl, combine mayonnaise, Dijon mustard, chopped pickles/relish, salt, and black pepper. Mix well.
