Cheesy Ranch Oven Roasted Potatoes

Ingredients:

4 large russet potatoes, scrubbed and diced

1/4 cup olive oil

1 packet ranch seasoning mix

1 cup shredded cheddar cheese (or more to taste)

Salt and black pepper, to taste

Optional: chopped parsley or chives for garnish


Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes: Place the diced potatoes in a large bowl.
  3. Season: Add olive oil, ranch seasoning mix, salt, and black pepper. Toss until all the potatoes are evenly coated.
  4. Bake: Spread the potatoes in a single layer on a baking sheet or baking pan.
  5. Roast in the oven for 35–45 minutes, stirring halfway through, until the potatoes are golden and crispy.
  6. Add cheese: Sprinkle shredded cheddar cheese over the hot potatoes and return to the oven for 2–3 minutes, or until the cheese melts.
  7. Serve: Garnish with parsley or chives if desired. Serve warm.
