Butterscotch Bars (Trisha-Style)

Soft, chewy, and topped with a smooth butterscotch icing — perfect for desserts or snacks.


Ingredients

For the Bars

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

1 cup packed brown sugar

1 cup granulated sugar

1 cup (2 sticks) unsalted butter, melted and slightly cooled

2 large eggs

1 tablespoon vanilla extract

For the Butterscotch Icing

1 cup butterscotch chips

4 tablespoons butter

1 cup powdered sugar

2–3 tablespoons milk (to reach desired consistency)

½ teaspoon vanilla extract


Instructions

  1. Prepare the Pan
  2. Preheat your oven to 350°F (175°C).
  3. Grease a 9×13-inch baking pan or line it with parchment paper for easier removal.

  1. Make the Bars
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger bowl, combine the brown sugar, granulated sugar, and melted butter. Mix until smooth.
  4. Add the eggs and vanilla extract, then blend well.
  5. Add the dry ingredients to the wet mixture and stir just until combined (don’t overmix).
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely before icing.

  1. Prepare the Butterscotch Icing
  2. In a small saucepan over low heat, melt the butterscotch chips and butter, stirring constantly until smooth.
  3. Remove from heat and whisk in the powdered sugar.
  4. Add milk, a little at a time, until the icing becomes pourable but still thick.
  5. Stir in the vanilla.

  1. Finish and Serve
  2. Pour the warm icing over the cooled bars and spread it evenly.
  3. Allow the icing to set for about 15–20 minutes.
  4. Cut into squares and serve!
