Pecan Pie Bars Recipe

Ingredients

For the crust:

2 cups all-purpose flour

1/2 cup granulated sugar

1 cup unsalted butter, cold and cut into cubes

1/4 teaspoon salt

For the pecan filling:

3 large eggs

1 cup light corn syrup

1 cup packed brown sugar

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

2 cups chopped pecans (plus whole pecans for topping if desired)

1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Prepare the crust by mixing flour, sugar, and salt in a bowl. Add the cold butter and blend until crumbly, then press into the baking pan. Bake for 15–20 minutes until lightly golden.
  3. In another bowl, whisk the eggs, then add corn syrup, brown sugar, melted butter, vanilla, and salt. Stir until smooth, then add the chopped pecans.
  4. Pour the filling over the warm crust and arrange whole pecans on the top if you want a decorative look.
  5. Bake for 25–30 minutes, or until the filling is set and does not jiggle in the center.
  6. Allow the pecan bars to cool completely, then lift them out using the parchment paper and cut into squares.
