Ingredients
2 cups cooked white beans (cannellini or great northern)
1½ cups diced cooked ham
1 tablespoon olive oil or butter
1 small onion, finely chopped
2 carrots, sliced
2 cloves garlic, minced
4 cups chicken broth
1 bay leaf
½ teaspoon dried thyme
Salt and black pepper, to taste
Chopped fresh parsley for garnish
Instructions
Heat the olive oil or butter in a pot over medium heat, then sauté the onion and carrots until softened. Add the garlic and cook briefly until fragrant. Stir in the ham, white beans, chicken broth, bay leaf, and thyme. Bring to a gentle boil, then reduce heat and simmer for 20–25 minutes until the flavors are well combined and the soup is slightly thickened. Remove the bay leaf, season with salt and black pepper, and serve hot with a sprinkle of fresh parsley.
