Ingredients:
- 12 oz penne pasta
- 1 ½ lb sirloin steak, cut into bite-size pieces
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 tsp garlic powder
- 1 tsp smoked paprika
- Salt & freshly ground black pepper
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 2 cups heavy cream
- 4 oz cream cheese, cubed
- 1 cup shredded cheddar
- ½ cup grated Parmesan
- ½ cup shredded mozzarella
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the penne until al dente, then drain and set aside.
- Season the steak bites with garlic powder, smoked paprika, salt, and pepper.
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear the steak for 2–3 minutes per side until browned to your preferred doneness. Transfer to a plate.
- Lower the heat to medium and melt the remaining tablespoon of butter. Add the diced onion and cook for about 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
- Sprinkle flour over the onion mixture and cook for 1 minute. Slowly whisk in the beef broth and heavy cream until smooth and slightly thickened.
- Add the cream cheese and stir until fully melted. Reduce heat to low and mix in the cheddar, Parmesan, and mozzarella until the sauce becomes rich and creamy.
- Return the steak (with all juices) to the skillet. Add the cooked penne and toss everything together until well coated. Adjust seasoning with extra salt and pepper if needed.
- Finish with chopped parsley and serve warm.
