Cheesy Spinach Ricotta Ring

You’ll Need

  • Sliced melting cheese to line the pan
  • 1 bunch spinach, cooked and squeezed dry
  • 2 cups ricotta
  • 3 large eggs
  • 1/2 cup grated Parmesan + a little extra
  • Pinch salt, pepper, and a tiny bit of garlic powder

How to make it

Grease a 9.5 inch ring or bundt pan. Line the bottom and sides with the cheese slices so there are no gaps.

In a bowl, mix spinach, ricotta, eggs, Parmesan, salt, and pepper.

Pour the mix into the cheese lined pan. Smooth the top. Sprinkle more Parmesan.

Cook covered on low medium heat in a snug pot for 20 minutes, or bake at 350°F for 25–30 minutes until set.

Rest 5 minutes. Flip onto a plate and lift off the pan. Slice and enjoy warm, or chill and reheat later.
