Baked Apple Fritters

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 large eggs

3/4 cup milk

2 teaspoons vanilla extract

2 tablespoons melted butter

2 cups diced apples (peeled)

Glaze

1 cup powdered sugar

2–3 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix the eggs, milk, vanilla extract, and melted butter.
  4. Add the wet mixture to the dry ingredients and stir until just combined.
  5. Fold in the diced apples.
  6. Drop spoonfuls of the batter onto the baking sheet, leaving space between each fritter.
  7. Bake for 10–12 minutes, or until golden brown.
  8. Mix the glaze ingredients until smooth, then drizzle over the warm fritters.
  9. Serve immediately and enjoy.
